Meatlovers 1 - Beef

Beef Stroganoff

Steak meat, sliced into strips (one or two steaks should do)
Two onions, sliced
4 tbsp. butter
1 can beef broth
1 small can tomato paste
1/4 cup water
1 tbsp. flour
salt and pepper to taste
2-3 tbsp. sour cream

Fry the onions up in the butter in a large skillet. Remove. Coat beef strips in flour, salt and pepper. Add beef strips to the skillet and brown. Remove beef. Pour beef broth and water and tomato paste into the skillet, blend well and bring to a boil (the leftover flour and butter from the beef cooking will thicken the broth). Add beef and onions back into skillet, and cook gently for about 10 minutes. Rmove from heat and add sour cream, blending it well.

Serve with boiled rice, noodles, or fried potatoes. Add dollop of sour cream on top if desired.

Upside-Down Pizza Casserole

1 1/2 lbs. hamburger
1 8oz. tub sour cream
Pepperoni
1 Green bell pepper, chopped
1 small onion, chopped
1 16oz. can of tomato sauce
2 rolls of crescent rolls
1 large pkg. of shredded Mozzarella cheese

Brown hamburger with bell pepper and onion in a saucepan or deep skillet. Drain. Add the can of tomato sauce and pinches; basil, parsley, mint flakes, salt and pepper to taste. Simmer covered, on medium heat for 15 minutes. Spread the meat mixture evenly in 9x13 baking dish. Next, evenly layer the sour cream with a spatula. Evenly distribute the pepperoni slices and top with mozzarella. Cover the top completely with the crescent rolls, then sparingly cover with butter. Sprinkle on a little garlic powder and Parmesan cheese and bake at 350 degrees for 25-30 minutes, until the top is golden brown.

Easy Reef and Beef (Surf and Turf)


for 2

2 pieces good steak (whatever cut appeals, rump, fillet etc)

topping:

4-5 green prawns peeled each
1/2 c thickened cream
2 tbs prepared seafood cocktail sauce (approx)

fry or bbq steak to desired doneness remove and keep warm to rest

lightly fry prawns until colour just changes
mix cream and sauce
pour into skillet and bring to boil
add prawns and allow to reduce to form thick sauce
(watch it as it will thicken quite quickly once it starts)
place prawns on steak and spoon over sauce

you could also use a mix of seafood scallops, crab meat, mussels if desired
