Pasta Perfection

PASTA: MY FAVORITE!!!

Here's one of my favorite recipes of my favorite food. It's easy to make and it's vegetarian:

Cheesy Vegetable Macaroni:

1 tablespoon olive or vegetable oil
1/2 cup finely chopped onion
1/4 cup finely chopped celery
1/4 cup finely chopped bell pepper
1/4 teaspoon minced garlic
2 medium zucchini, sliced = about 3 cups
1 cup thin sliced carrots


1 small can tomato sauce
1 pinch sugar

1 cup sliced black olives
5 cups 90 percent cooked corkscrew macaroni (about 4 cups dry)
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1 jar (28) ounces Cheese Spaghetti Sauce
Salt and Pepper to taste



In 12 inch skillet, over medium heat cook vegtables in oil until tender. Stir often.

Add tomato sauce and pinch of sugar and cook 10 minutes. Med heat, stirring often.

Add spaghetti sauce, black olives and (90 percent cooked) macaroni. Add salt and pepper. Heat on low about 10 minutes- until macaroni is completely done, stirring occasionally.

Stir in Cheese and serve.

Makes 5 to 6 main dish servings, depending on the appetites of the people being served! ;)

Ergo’s Chorizo Pasta


Sauce:
Olive oil
1 chopped onion
1 or 2 chorizo sausages (dep on size)
2 rashers bacon
1 tin chopped tomatoes
2 tbs tomato paste
2 tsp sambal oelek, chopped red chilli, or 1 tsp dried chilli flakes (adjust for the level of heat you like or leave out)
2 tbs fresh chopped mint

Pasta:
About 250g dried pasta for 4 moderate serves

Cook pasta per instructions

Fry chorizo bacon and onion in oil until colour leaks from chorizo and onion is transparent
Add tomatoes and paste and chilli and stir through
Leave to simmer slowly about 10 mins or so
Mix with cooked pasta
Stir through fresh mint

Serve with parmesan/ romano cheese if desired (we do!)

This is my supremely basic pasta. Great for a cold day when you're not in the mood to cook for 5 hours.

Lacey's Penne Pasta

1 can of whole plum tomatoes
or
6 plum tomatoes, fresh.
Oregano, fresh or dried.
Garlic, 3 cloves.

Mash can of tomatoes, or cook the fresh tomatoes in boiling water for five minutes each. Remove and dip in icy water. Peel skins and mash.

Add oregano to taste, I usually do about three shakes from a bottle, or a medium sized sprig.

Slice garlic cloves and add to sauce.

Simmer sauce on medium for 15 minutes, or as long as it takes to cook the penne! Remember, the longer the simmer, the more tomato breakdown and the better it tastes!

This is a great sauce to make in advance and reheat as needed. Tastes even better the next day.

Easy Carbonara gnocci bake


boil 1 packet potato gnocci (about 500g)
drain and set aside

In a bowl mix

1 c thickened (whipping) cream
2 egg yolks
1/2 c grated parmesan cheese
1/2 c grated tasty cheese
salt and fresh ground black pepper

(if as a main add about 3 rashers chopped and cooked bacon)

Mix with gnocci and put into an ovenproof dish
bake at 180 deg C until browned
